Privacy, terms, and the two waivers
The four documents

Publishing makes the checkbox appear
Each document is draft or published. Until the Privacy Policy and Liability Waiver are published, the agree-to-this checkbox on booking and forms does not appear at all -- meaning people are booking with no recorded waiver. Publish them before you take real bookings.
Version history
Every time you save a document, the CMS keeps the previous version. Each acceptance a visitor makes is recorded against the exact version that was live at that moment -- so if you ever need to show what someone agreed to, you can.
Writing them
The CMS gives you a reasonable starting point for each. Read it, adjust it for your business, and -- for anything that carries real legal weight, like a liability waiver -- have someone qualified check it. It is your document, not boilerplate you can ignore.
